Directions:

Except for cheddar cheese and green onions, pour ingredients into crockpot. Gently stir.

Close lid and lock. Lid knob should be at sealing.

Press: manual and then high pressure. Set cooking time to 22 minutes.

After cooking cycle, opt for quick pressure release by turning knob to venting.

Wait for steam to subside before removing lid.

Using a rice paddle, fluff up rice.

Ladle equal portions of rice into plates. Garnish with green onions and vegan cheese just before using.

Cooking Tip! As a variation, remove cheddar cheese from this recipe. Substitute with 1 Tbsp. good quality extra virgin oil, 1 tsp. fresh bird’s eye chili (minced,) and ¼ tsp. kosher salt. Cooked shelled edamame beans and/or green peas also work well in this recipe.
