Ingredients for the Filling:

1 c. fresh or frozen cranberries

1/2 c. water, plus more if needed

1/4 c. sugar

1 slice of orange peel, about 2 inches (just the orange part)

Directions:

Preheat oven to 350 degrees. Set aside two baking sheets, covered in parchment paper or silicon liners.

Whisk together the flour, cornmeal, and salt in a medium bowl. Beat butter and 1/4 cup sugar with a mixer on medium speed until pale and fluffy, about 2 minutes.

In a separate bowl, whip together the ground flax seeds and the warm water, until thick and gooey, like an egg yolk. Add the flax mixture and orange zest to the butter and sugar, and mix well. Reduce speed to low. Add flour mixture, and mix until just combined.
