Pot Roast Upchuck
Serve over rice! Makes 6 servings.
Ingredients:
• 1 tbsp oil
• 1 cup roast beef cut into 1x1 chunks
• ½ tbsp beefy onion seasoning (such as Lipton’s)
• ½ tbsp brown sugar
• 1 tbsp apple cider vinegar
• 1 container unsalted beef broth + 1 Tbsp
• 1 cup tomatoes stewed or diced
• 1 small jar tomato paste
• 1 tsp Worchester sauce
• 1 julienned onion
• 1 can no-salt veggies, drained
• ½ cup diced potatoes
Directions:
In a plastic bag add roast beef, beefy onion seasoning, brown sugar, apple cider vinegar, 1 Tbsp broth and let sit in refrigerator 4 hours to overnight.
Empty contents into crockpot.
Add in tomatoes, tomato paste, Worchester sauce, onion, veggies, potatoes.
Cook on high 6 hours.
