Traditional-Style Tzatziki

CACIK

Ingredients:

1 large cucumber or 4 small cucumbers

8 oz. yoghurt

1 water glass of cold water

2 tbsp. olive oil

1 clove of garlic, mashed

1 tsp. salt

1 tsp. Dried or fresh dill

Preparation:

Wash and peel the cucumbers. Grind them with a medium-sized grater. At a square-shaped grater it is the coarse grinding surface. Please do not take the finest, but the coarse grater. Otherwise the cucumbers will loose too much water and thus flavor.

Stir the yoghurt, the cold water, salt, the mashed garlic clove and the dill thoroughly with a whisk until you get a watery mixture.

Now add the ground cucumbers to the bowl and stir again thoroughly with the whisk. Then let the mixture cool down in the fridge for about 30 minutes.

Traditional-style Cacik is served very runny. It is an alternative to a soup on hot days. Its preparation is easy, but the mix is very nourishing. A great, tasty appetizer!
