Cactus

Another important vegetable in Mexico is the cactus. Cacti (Opuntia) yield an edible fruit known as tunas or prickly pears but also a vegetable from the nopal cactus. The spines are removed from the pads of the cactus, which are sliced and marinated in an intriguingly tasty and slimy salad, and are also used to fill tacos (figure 4.6). The fruits are made into jellies, candy, and sour drinks. The name in Nahuatl is tenochtli, which gives the name for the Aztec capital Tenochtitlan, which in myth was chosen when an eagle bearing a snake landed on a cactus plant. This symbol is still on the Mexican flag. Surprisingly, these cacti were introduced into southern Italy and Sicily, where they are called figu d’India (Indian fig).
