Curried beef

Ideally, curry powder should be made for each dish with fresh spices. But at least we can start with a tin we have not had for more than a fortnight.

Ingredients (for 6): 4 dessertspoonfuls curry powder, 1 clove garlic, 2–3 tablespoonfuls cooking oil, 1 teaspoonful salt, ½ teaspoonful ground black pepper, 2 lbs. beef cut into small cubes, 2 small onions, 3 tablespoonfuls soya sauce, 1 cup stock or hot water, 1 tablespoon cornflour, 4 tablespoonful stoned raisins and one apple (large)

Heat oil in heavy pan. Stir in curry powder and when blended add crushed garlic, salt, pepper and ginger. Mix well. Add the meat, chopped onion and raisins. Stir and cook until the onion is soft. Add the soya sauce and water or stock. Bring to boiling point and cook gently until even and soft (about 5 minutes). Add the cubed apple. Mix the cornflour with a little water and stir into the meat mixture. Serve with rice and chutney.
