Sweet Mini Bundt Cakes

For the mini bundt cakes:
1 stick butter, softened, plus extra for greasing baking pan
½ cup sugar
1 pinch salt
2 eggs
1 cup flour
2 teaspoons baking powder
â cup egg liqueur
For icing:
1 cup powdered sugar
3 tablespoons egg liqueur
Also needed:
6-cavity mini fluted tube baking pan
Preparing the the mini bundt cakes:
I. Preheat oven to 325°.
II. Grease the baking panâs molds with butter.
III. In a mixing bowl, using a hand mixer, beat the butter, sugar, and salt until light and fluffy. Incorporate the eggs one by one.
IV. In a small bowl, combine the flour and baking powder. Add it to the butter mixture and stir in the egg liqueur until the batter is smooth and creamy.
V. Pour the batter into the molds of the pan and smooth the tops. Bake for about 20 minutes; a toothpick inserted in the center of a mini cake should come out clean. Let cool in pan, then carefully remove the mini cakes.
Preparing the icing:
VI. To serve, whisk the powdered sugar and egg liqueur in a small bowl and pour the mixture over the mini cakes.
