Vegetarian Loaf with Brown Rice

Vegetarian food does not have to be bland or dull. Your family might not even realize this meal is meatless.

2 tablespoons extra virgin olive oil

1/2 cup diced onion

1/2 cup diced bell pepper

2 cloves garlic, minced

1 teaspoon thyme

1/2 teaspoon basil

3 cups cooked brown rice

2 eggs, lightly beaten

1/4 cup shredded carrot

1 tablespoon soy sauce

1 tablespoon Worcestershire sauce

1 teaspoon salt

1/2 teaspoon black pepper

1/2 cup ketchup

Preheat oven to 350 degrees. Spray loaf pan with cooking spray.

In a medium saucepan over medium heat, heat olive oil. Add onion, bell pepper, garlic, thyme, and basil. Sauté until onion is soft.

In a large mixing bowl, combine onion mixture with brown rice, eggs, carrots, soy sauce, Worcestershire sauce, salt, and pepper. Mix well. Place in loaf pan.

Bake for 30 minutes. Remove from oven. Spoon ketchup over top. Bake for 10 more minutes.
