As the name suggests, this is designed to be a spicy rice. If you want less spice or none at all, simply omit the jalapeño and go easier on (or nix) the chili-garlic sauce and the optional spicy ingredients for both the main recipe and the yum yum sauce. To that point, if you want it spicier, add more to your heart’s content (and pour a second glass of milk).

Make it vegetarian by omitting the pork—if you’re okay with using eggs. If not, nix them.

If you want it to be gluten-free, be sure to sub tamari or coconut aminos for the soy sauce and use gluten-free hoisin and oyster sauces. Keep it soy-free by using coconut aminos.
