SQUASH TACOS

This makes a light change from some heavier taco fillings – ideal for a lunch that doesn’t make you feel sleepy for the rest of the day!

1 large onion, halved and sliced

4 tablespoons vegetable oil

2 teaspoons ground cumin

2 teaspoons dried oregano

2 teaspoons ancho chilli/chili powder

1 teaspoon fine sea salt

a good pinch of ground cinnamon

1.2 kg/2 lb. 12 oz. butternut squash, peeled and cubed

8–12 corn or flour tortillas, warmed

To serve

vegan sour cream or yoghurt

sprigs of fresh coriander/cilantro

Lighter Guacamole (see page 19)

hot sauce (such as Tabasco)

lemon wedges
