Apricot and Orange Grilled Pork Skewers

Ingredients:

1 ½ pounds pork tenderloin, cut into 1-inch pieces

1 cup apricot preserves or jam

3 Tablespoons honey

1/4 cup olive oil

1 Tablespoon soy sauce

3 Tablespoons honey Dijon mustard

1 Tablespoon orange juice

4 rosemary sprigs, plus extra for garnish

6 finely minced garlic cloves

salt and black pepper

16 cloves of garlic

Instructions:

Combine olive oil, mustard, preserves, honey, orange juice, soy sauce, rosemary, minced garlic, and a dash of salt and pepper in a large bowl and stir well. Place pork tenderloin pieces and stir to make sure all pieces are fully coated. Cover bowl and put in the refrigerator for at least an hour, preferably overnight.

Heat the grill to medium-high and thread pork and garlic cloves onto skewers alternately. Cook for approximately 15 minutes, turning every 2 minutes until fully cooked and brown. Continue brushing with marinade during the cooking process if desired. Serve immediately.
