Even those who don’t need to be on a wheat-free diet will adore this banana bread. It tastes just as good with or without the walnuts.

Serves 10

1⁄4 cup butter, softened

2⁄3 cup turbinado sugar

2 eggs

3 tablespoons plain nonfat Greek yogurt, wheat-free

2 tablespoons water

1 teaspoon wheat-free vanilla extract

2 tablespoons ground flaxseed

2 cups brown rice flour or rice flour

1 teaspoon wheat-free baking powder

1⁄2 teaspoon baking soda

1⁄2 teaspoon salt

1⁄2 teaspoon cinnamon

1 cup mashed ripe banana (approximately 3 large bananas)

1⁄3 cup finely chopped walnuts (optional)
