½ Tbsp fresh minced ginger

½ large rib celery, cut into medium dices

½ tsp kosher salt

1 cup chicken broth

Chopped fresh chervil or chives, for garnish

⅛ tsp ground white pepper

Directions

Preheat oven to 375°F.

Whisk oil, lemon juice, garlic, oregano, pepper flakes, pepper in a large bowl, then add in feta. Cover and set feta marinade in the fridge for 10 minutes.

Scatter lemon slices and onion at the bottom of a baking dish.

Add fillets to the baking dish, skin side down. Season with salt and pepper.

Bake for 20 minutes or more until flaky and opaque.

Add tomatoes, olives, cucumbers, onion, and dill into the bowl with feta. Fold to combine.
