WRAPPER’S DELIGHT

If you’re planning on eventually making more than one recipe of chews, caramels, or anything else that needs to be wrapped individually, it’s worth investing in a package of wax twisting papers (see Resources). Wrapping chewy candies individually helps protect them from humidity, thus extending their shelf life (and keeping them from sticking together). You can cut your own wrappers out of parchment or wax paper—3-inch squares are perfect—but that can get tedious after wrapper number 50 or so. That said, if you have a paper cutter, go ahead and use it!
