Makes 1 cup

1. Whisk 1 tablespoon cornstarch into 2 tablespoons almond or other nondairy milk (cold), incorporating fully. Set aside.

2. Combine ½ cup coconut milk and ½ cup vegetable stock and bring to a simmer. Remove from heat and whisk in cornstarch mixture. Sauce will thicken as it cools. Add salt, pepper, and other ground spices to taste.
