Berry Baked Oatmeal

This breakfast oatmeal bake is a great meal prep option for breakfast or even for snacks throughout the week. With all the flavorful berries, it’s almost like a cobbler for breakfast. It is great topped with Greek yogurt for some extra protein and a probiotic punch.

Oatmeal, applesauce, flax and berries are all prebiotic fibers that feed the “good,” beneficial bacteria in the gut, promoting optimal diversity, which has been shown to improve symptoms such as constipation, diarrhea and bloat. Berries also contain a compound called polyphenols, which are packed with antioxidants and can help reduce inflammation in the gut.

Makes 8 servings

2 cups (480 ml) almond milk or milk of choice

½ cup (120 ml) unsweetened applesauce

¼ cup (60 ml) maple syrup

2 cups (180 g) rolled or sprouted oats

⅓ cup (45 g) ground flaxseed

⅓ cup (53 g) hemp seeds

1 tsp cinnamon

1½ cups (280 g) frozen mixed berries
