Black Bean Burgers with Creamy Cilantro Pesto SERVES 4

A hearty burger with bold flavors! There aren’t many premade, gluten-free veggie burgers available, so this is a handy meat-free recipe to have on hand. Beans are loaded with water-soluble fiber that may help to lower your cholesterol.

For the burgers:

1 (16-ounce) can black beans, drained and rinsed

½ red bell pepper

½ onion

1 clove garlic, peeled and crushed

2 tablespoons green chilies

¼ cup fresh cilantro leaves
