Chestnut mushroom salad

chestnut button mushrooms, 12, finely sliced

balsamic vinegar, a light sprinkling (½ a glug)

good olive oil, 1 glug

toasted sesame oil, a light sprinkling (½ a glug)

salt, 1 pinch

4 portions

Again, very easy to make, and an interesting sideshow to the main salad event, adding variety and flavours to the dish.

Simply place the mushrooms on a shallow dish, sprinkle the balsamic, toasted sesame and olive oils over and toss, then sprinkle the salt. Fantastic combination of flavours in this one and so easy to make. - best eaten fairly soon after it is made.
