21⁄2 teaspoons salt, divided

3⁄4 teaspoon pepper, divided

1 large egg, beaten

1⁄2 cup extra-virgin olive oil, divided

1 bay leaf

1 (28-ounce) can plum tomatoes, puréed

1⁄8 teaspoon cinnamon
