Butchered Snake Bits

These chewy, juicy snake bits (sausage) are swimming in blood (barbecue sauce) and guts (grilled onion and green pepper)!

Difficulty: Medium

Makes 4 servings

½ cup green bell pepper, diced

½ cup onion, diced

1 tablespoon vegetable oil

1 pound cooked mild sausage

1½ cups prepared barbecue sauce

Wash the green pepper and pat it dry with a paper towel. Clean out the seeds. Using a clean knife and cutting board, cut about half of the green pepper into very small pieces until you have ½ cup.

Peel the onion and dice it into very small pieces.

Heat the oil in a large saucepan over medium heat. Sauté the diced green pepper and onions until the onion is translucent, about 5 minutes.

Cut the sausage into bite-sized chunks. Put the meat in the saucepan.

Pour the barbecue sauce over the sausage, peppers, and onions in the saucepan. Cook over medium-low heat for about 30 minutes, stirring every 5 minutes.
