Peel the potatoes and grate them into a bowl. Rinse the potato under cold water and pop into a colander to drain off all the water. Place them back into a bowl and mix through the egg yolk, a pinch of white pepper and the flour.

Add the onion and a glug of oil to a medium saucepan over a low heat. Cover and sweat until it is caramelized and golden – about 8–10 minutes. Remove the pan from the heat and add the potato mixture. Combine everything together, adding a pinch of salt. Form into 4–6 rough pancake-like discs.

Add a big glug of olive oil to a large frying pan over a medium heat. Add the potato latkes and fry gently for a few minutes on each side, until golden. Try not to move them around the pan as they might stick.

Remove the latkes from the pan and place straight onto a piece of kitchen roll.

Add the salt beef into the pan you used for the cakes, just to heat it through.

Lay the cakes on a plate and tear over the salt beef. Top with thin strips of pickle and drizzle with the yellow mustard.
