Heat a wok or a large high-sided skillet over medium-high heat, add the oil, and heat until it just starts to shimmer. Add the mustard seeds and cook until they start to pop, about 1 minute. Add the cumin, fennel, fenugreek, and onion seeds, and toast until fragrant, 30 to 60 seconds. Add the shallot, garlic, ginger, and turmeric, and cook for about 1 minute more.

Add the curry leaves. As soon as they start to crackle (almost immediately), add the braising greens and season with salt and pepper. Sauté for a couple of minutes, stirring and turning the greens occasionally, until the greens are wilted. Serve immediately.
