Sauce is lumpy

Fat too hot when flour was added. Roux not cooked sufficiently. Liquid added too quickly and not stirred enough.

Force the hot sauce through a coarse sieve into a clean saucepan, or blend in a liquidiser at high speed for 1–2 minutes. Reheat over low heat, stirring vigorously.
