Peach Chicken Salad with Bulgur

Time: 20 minutes | Serves: 4

Ingredients:

1⅓ cups of water

⅔ cup of bulgur

Cooking spray

1 pound of chicken breast cutlets

1 teaspoon kosher salt, divided into two ½ teaspoons

½ teaspoon of black pepper

4 cups of packed arugula

2 cups of halved cherry tomatoes

2 cups of sliced fresh peaches

3 tablespoons of extra-virgin olive oil

2 tablespoons of rice vinegar

Preparation:

Bring the water and bulgur to a boil. Cook for around 10 minutes until it is al dente. Drain the bulgur and set aside.

Season the chicken cutlets in with ½ teaspoon of salt and the pepper.

Coat a non-stick skillet in the olive oil and cook the chicken for around 7 minutes, on a medium-high temperature, turning occasionally.

Let it rest for around 3 minutes, and then cut it into thin strips.

Combine the cooked bulgur with the arugula, tomatoes, peaches, adding vinegar and the remaining ½ teaspoon of salt.
