Carrot Pudding

Ingredients

For Pudding:

1/2 cup peeled and grated carrot

1/2 cup flour

1/2 teaspoon baking soda

1/2 teaspoon ground allspice

1/2 teaspoon ground cinnamon

Pinch of ground nutmeg

2 eggs

1/2 cup brown sugar

1/4 cup molasses

⅔ cup grated frozen shortening

1 cup breadcrumbs

1/2 cup raisins

1/2 cup chopped pecans

Pinch of salt

For Sauce:

4 tablespoons butter

1/2 cup brown sugar

1/4 cup heavy cream

2 tablespoons rum

1/4 teaspoon ground cinnamon

Directions:

Beat the eggs with molasses and brown sugar in a very bowl.

Add the remainder Ingredients of pudding in for the bowl. Mix them well.

Pour this mixture in for the greased 6-inch baking pan. Cover it with tin foil.

Select the *Meat/Chicken* about the Power Pressure Cooker XL and also set for starters hour.

Add 2 Servings: of water towards heating pot as well as set the trivet inside.

Place the Baking pan for the trivet.

Secure the lid and turn pressure to achieve success knob towards the closed position.

Once done; release the stress completely and take away the lid.

Transfer the pudding from the pan with a serving plate.

Cook every one of the Ingredients for sauce in the pan over medium heat for two minutes.

Stir well and pour this mixture within the cooked pudding. Serve and luxuriate in.
