Odyssey Greek Yogurt products are made by Klondike Cheese Co. in Monroe. Thirteen of the country’s 60 master cheesemakers work in Green County creameries.

Bruce Workman of Edelweiss Creamery, 10 miles north of Monroe, is a master cheesemaker for 11 kinds of cheese. That includes Swiss Emmenthaler, and nobody else in the U.S. makes it in 180-pound wheels.

“You make cheese at least 10 years before entering the master cheesemaker program,” noted Ben Brancel, Wisconsin’s secretary of agriculture.

Though cheese is the headliner for Monroe’s three-day festival, it’s also an opportunity to show off all that is Swiss. That means buttery Bratzeli cookies (similar to the Italians’ pizzelle), demos of chip carving (to make intricately ornate wooden items), Swiss dancing, yodeling and music by Aarelander Musikanten, a brass band from Switzerland.
