Starting my day out with a sweet pastry and a cup of coffee is a recipe for a blood sugar crash by 10 A.M. I haven’t let go of the coffee, but cooking a quick breakfast that has fiber, protein, and some greens is the way I get through the morning. If you’ve made a pot of black beans (see page 66) for the week, they’re delicious here. Otherwise canned black beans that have been rinsed work well, too. If you’re sensitive to nightshades, substitute mango for the cherry tomatoes.
