For vinaigrette:

2 tsp of yellow mustard

1/3 cup of olive oil

¼ cup of balsamic vinegar

1 garlic clove - small, grated

½ tsp of salt and pepper.

Serving Size: 4

Preparation time: 30 mins

Instructions

1. Preheat the oven to 425 degrees F. Then, place the rack in the middle of the oven.

2. Onto to the baking sheet spread out the mushrooms, sweet potatoes, and shallots. Pour the olive oil and sprinkle a good amount of salt and pepper, toss and mix to combine.

3. Place the tray into the preheated oven. Then, roast it for 20 mins.

4. By the time it is roasting, prepare yourself to make the vinaigrette. Then, in a small bowl mix all the ingredients together, whisk well and keep it away.

5. After roasting the vegetables, set them onto a large bowl. Keep tossing the mix by pouring in the prepared vinaigrette, coat it completely.

6. Now throw in the goat cheese and kale leaves, combine them.

7. Before serving, toss in the pumpkin seed and enjoy the roasted crunchy easy salad.
