Yoghurt & Almond Sponge

Sweet Creation: Spiced & Fluid Pineapple, White Chocolate, Yoghurt & Vietnamese Mint

This unusual sponge is absolutely delicious and the tang of thickened yoghurt really shines. I spread the batter thinly to make sheets, but this recipe works just as well as a thicker sponge for a brilliant version of a classic Victoria sandwich. I use this sponge in my Spicy Fluid Pineapple, White Chocolate, Yoghurt and Vietnamese Mint dish.

Preparation time: 20 minutes

Cooking time: 8–10 minutes

Makes: 295 g (10 oz) – two sheets each 30 cm x 40 cm (12 inches x 16 inches)

60 g (2¼ oz) egg whites, at room temperature

35 g (1¼ oz) caster (superfine) sugar

45 g (1½ oz) egg yolks, at room temperature

75 g (2¾ oz) Marzipan, chopped

35 g (1¼ oz) thick Greek-style yoghurt

10 g (1/3 oz) lemon juice

35 g (1¼ oz) plain (all-purpose) flour, sieved
