Mouthwatering Chocolate Barbecue Sauce
This sauce is great with grilled vegetables, marinades, tofu, tempeh, mushrooms, eggplant, veggie burgers, or anything else your little heart desires! For some people, vegetables aren’t done until a sauce has been added. This delicious barbecue sauce is for them! In addition, this healthy sauce doesn’t contain the additives and preservatives found in many commercial brands.
2 cups (360 g) chopped seeded tomatoes
2 tablespoons (28 ml) tamari or soy sauce
1 teaspoon chili powder
1/2 teaspoon each ground cumin, paprika, black pepper
2 tablespoons (30 g) packed brown sugar or to taste
1/2 teaspoon garlic salt or smoked salt, or to taste
2 minced garlic cloves
2 teaspoons prepared mustard
1 tablespoon (15 ml) olive oil
1/4 cup (40 g) chopped onion
1 teaspoon minced fresh hot chile pepper (Fresno is good.)
1/4 teaspoon ground sage
1 to 2 tablespoons (15 to 28 ml) malt vinegar
1/2 cup (120 ml) broth or bouillon
2 ounces (55 g) grated unsweetened or bittersweet chocolate, or more to taste
Heat all of the ingredients except the chocolate and broth in a large saucepan over medium heat. Simmer for 30 minutes, adding the broth slowly as the tomatoes cook down.
Cool the mixture down and then purée in a blender. Return to the pot over medium heat and stir in the chocolate. Cook for an additional 10 minutes, adjusting seasonings to taste.
VARIATIONS: If the sauce seems too watery, add tomato paste or cornmeal, 1 teaspoon at a time, or just be mindful as you add the broth. You can also cut the tomatoes in half and slow roast them before making the sauce, which gives a different, richer flavor.
