Sgroppino

Equally at home as a drink, served as a refreshing summer dessert or even a palate-cleanser between courses, this classic Italian frozen cocktail is probably the most gorgeous slushie you’ll ever encounter. Why not keep a tub of lemon sorbet in your freezer and a few individual-serving size bottles of fizz in your fridge for when the urge for a Sgroppino takes hold!

60 ml/2 oz. vodka

2 rounded tbsp lemon sorbet

2 dashes of egg white (optional though it’s a good addition as it makes the drink more frothy)

2 x 200-ml/6¾-oz. (small) bottles chilled Prosecco, Asti Spumante or other sparkling white wine

finely grated lemon zest, to garnish

SERVES 2

If you have time, put the vodka and a mixing bowl (ideally metal) in the freezer for a few hours before you want to serve the drinks.

Put the vodka, lemon sorbet, egg white (if using) in the freezer-frosted bowl and add 1 bottle of the Prosecco. Using a ballon whisk, beat well to combine and introduce air into the mixture.

Carefully spoon the mixture into 2 chilled coupes, cocktail glasses or Champagne flutes. Top up with the second bottle of Prosecco (you may not need all of it) and stir very gently. Garnish each drink with a sprinkle of lemon zest, add a spoon or a straw (depending on what is most practical for your choice of glassware) and serve at once.
