Pointing techniques: the trick is to have the mortar exactly right in consistency for working up and sticking to the trowel. It is also important to place and compress the mortar without getting any smeared onto the face of the stone (or brick).

CATCH TRAY

Working at height on scaffold lifts will lead to a lot of mess falling down, so make a tray from some spare board with a fence to prevent stuff rolling off; this can be pushed up against the wall to collect the debris. Walls can often be bordered by soil or vegetation which may need protection; using a tray also reduces cleaning up, and when pointing, it will also prevent the inevitable lumps of mortar falling down and possibly staining stone or paving below. This device is also handy because small tools can be put down without fear of them falling between the boards.
