Peters’ Bakery is an institution in San Jose, California, where I grew up. Tony Peters opened his family bakery in 1936, and for seventy years he and his family have kept their bakery cases filled with homemade goodies. Their date bars are heavenly, and a family favorite. They even survived a long trek to Bahrain in a care package for my husband. Nancy Peters, Tony’s daughter-in-law, just laughed when I asked for the secret recipe, so I developed my own version and, if not exact, it captures the essence of their delicious little bars. Desiccated coconut may seem unusual, but its dry, crumbly texture and subtle coconut flavor balance the creamy, caramelized sweetness of the date filling.
