Best-Ever Brocco-Flower Soup

3 c. broccoli, chopped

2 c. cauliflower, chopped

4 c. chicken broth

2 c. milk, divided

2 c. cooked chicken, diced

1 t. salt

6 T. cornstarch

1 c. shredded Cheddar cheese

In a large saucepan over medium-high heat, cook broccoli and cauliflower in broth until tender. Do not drain. Reduce heat to low; add 1-1/2 cups milk, chicken and salt. In a small bowl, stir cornstarch into remaining milk; mix until smooth and stir into mixture in saucepan. Cover and cook over low heat, stirring frequently, until soup is hot and thickened. Stir in cheese until melted. Makes 6 servings.
