You can make the theatrical cracking open of the salt crust at the dinner table a ceremonious occasion. Carefully crack open the salt crust – some use a hammer, but I bash mine with a rolling pin – and carefully peel away the rest of the salt crust from the fish. You will reveal perfectly cooked, moist fish with the bright fragrance of lemon and thyme.

Ultimate Salt Baked Potato

There is nothing more comforting than a baked potato. I was looking for a way to elevate its status and, through my research into salt baking, discovered that this is a brilliant method to achieve the ultimate baked potato. The salt crust allows the potato to retain the maximum moisture, leaving you with really waxy, buttery insides with a delicious concentrated flavour. I like these as a side with grilled fish or steak and slathered in butter or sour cream (or both…) but with the right filling they can also be a fantastic dish in their own right. I’ve provided recipes for two delicious fillings overleaf but they also work really well with my Boston Beer Baked Beans (see here), Gingered Coronation Chicken (see here) or filled with my Braised Lamb Mince (see here) and topped with a mash made from the potato innards to create a filled potato skin version of a shepherd’s pie.
