Straight-Edged Pocket Knives
Pocket knives with straight cutting edges can be sharpened exactly the same way as straight-edged cutlery knives. The only difference is the edge bevel. Pocket knives and similar small knives usually have an edge bevel of about 15 degrees.
In some instances the blade bevel and the edge bevel are one. In such cases, all you need do is place the flat of the blade against the stone and stroke just as you would a straight-edge knife. If the blade bevel is not the same as the edge bevel, you will have to make several test passes of the knife across the stone to establish the correct bevel angle. You can tell you have the correct angle by examining the blade after each trial pass. The width of the shiny metal exposed by the pass should line up with the line of the factory bevel or the bevel of a previous accurate sharpening.
When you have the correct angle, use your fingers to set and hold the angle while you push the knife across the stone. Rough-bevel and hone both bevel angles as necessary.
