Sea urchin tops all of our lists. Favorites lists. Desert island lists. Last meal lists. If you haven’t had it before, try it. Exotic as it looks and sounds (if you haven’t had it), it’s actually a familiar and beloved part of the food culture in lots of places—from the West Coast to the Mediterranean to Japan. For this recipe, we like San Diego sea urchin. It’s sweeter and less aggressively briny than the East Coast variety. It’s not local for us, but you know, neither is pecorino. It’s a treat. And while we wholeheartedly endorse eating something this good just as it is, if you want to do it up, this is the way to do it.
