100 g (4 oz) butter

500 g (1 lb 2 oz) onions, chopped

50 g (2-oz) piece of fresh ginger, finely chopped

4 medium-hot red chillies, stalks discarded, chopped

1 tablespoon crushed pasilla chillies (here)

400 g (14 oz) can of chopped tomatoes

1 tablespoon ground turmeric

1 tablespoon ground cumin

1 tablespoon ground coriander

2 tablespoons paprika

1 kg (2¼ lb) lean lamb, such as leg, cut into 4 cm (1¾-inch) pieces

150 ml (¼ pint) water

200 ml (7 fl oz) canned coconut milk

500 g (1 lb 2 oz) small waxy potatoes, such as Charlotte, peeled and cut into 2–3 cm (about 1-inch) pieces

2 tablespoons sunflower oil

1 tablespoon black mustard seeds

A bunch (about 40 g/1½ oz) of coriander, roughly chopped Sea salt
