Beef Curry Delight

Preparation Time: 25 minutes

Ingredients:

2 pounds boneless beef chuck (cut into 1 ½ inch pieces)

1 cup water

1 tsp cayenne pepper 1 tsp garlic powder 1 tsp ground turmeric 1 tsp ground coriander

1 tsp ground cumin 1 ½ (2 inches) cinnamon sticks 2 whole cloves

3 whole cardamom seeds 1 tsp ginger paste 5 green Chile peppers (finely sliced)

6 cloves garlic, minced 1 onion, chopped 3 tbsps olive oil

Directions:

In a skillet, heat the olive oil over medium heat then add onion.

Cook onion for about 5 minutes, once it has softened, reduce heat to medium low. Then for about 15 to 20 minutes, continue cooking until onion is very tender and dark brown.

Stir and cook the cinnamon sticks, cloves, cardamom seeds, ginger paste, green Chiles, and garlic. Cook for 3 to 5 minutes until garlic begins to brown.

In the onion mixture, add or mix water, cayenne pepper, garlic powder, turmeric, coriander, and cumin. Simmer until mixture has thickened and until most water has evaporated.

For 1 and 1 ½ hours, cook the beef chuck pieces then simmer it over medium-low heat and stir until beef is cooked and tender.

Once cooked, serve it with naan or pita bread.
