You will need

Sharp knife

Small plant pot with drainage holes and drip tray

Potting compost

Kitchen scissors

To regrow coriander

1 Select a good-sized handful of coriander stems with the roots intact.

2 Use a sharp knife to remove the bottom 5cm (2in) of the stems. Retain these for regrowing and use the delicious leafy tops as you wish. Be sure the stems have a visible root – if this is not present, the following steps may not work.

3 Place your root cuttings in a small, clean glass and fill it with just enough cool water to cover the root section.

4 Place the glass of coriander cuttings somewhere bright and warm be sure to change the water every day. Within a couple of days, you should notice that the coriander stalks are beginning to grow and produce tiny new coriander leaves. This is a great sign that you’re on your way to reproducing a new, healthy coriander plant.

5 When you’re confident that the roots have begun to regrow, too, it’s time to transfer the coriander to a plant pot so it can continue to prosper, nourished by the various minerals that are found in soil.

6 Place the roots in the hole and add more potting compost if necessary, gently compacting the soil around your coriander.

7 Put a suitably sized drip tray or saucer underneath the plant pot to prevent spillage, and water your coriander plant thoroughly. Coriander prefers fairly moist soil, so allow excess water to pool in the saucer below. If your plant starts to dry out, it will draw up liquid from the base.

8 Place the plant pot in a bright and sheltered position (this can be indoors or outdoors). Water the plant daily, paying close attention to the moisture of the soil and making sure the plant isn’t too dry.

9 Within weeks, you should be rewarded with a healthy, bushy crop of coriander. When you come to harvest the herb, use a clean pair of scissors to take what you need, but leave at least one leaf on each stem so that the plant remains healthy and in a good place to grow back once more and serve you again in the future.
