If you only try fish-head steamboat once, you’d do well to make it at this hawker-style legend. The fish head is brought to you in the steaming broth of a large conical-shaped pot and is then shared by everyone at the table. One is enough for three or four people, and can stretch to more with rice and side dishes. There are four types of fish to choose from – go for the fleshier red snapper ($20).
