Ingredients for Dressing

1/4 cup mayonnaise

2 tablespoons plum or strawberry jam

2 teaspoons freshly squeezed lemon juice

Salt and pepper

Ingredients for Serving

6 iceberg lettuce leaf cups

1 can (5 ounces) chow mein noodles

Combine all salad ingredients in a large bowl. Set in refrigerator while making the dressing.

Combine the mayonnaise, jam, and lemon juice in a small bowl. Add salt and pepper to taste.

Remove salad from refrigerator and toss with dressing. Divide equally among lettuce leaf cups, top with chow mein noodles, and serve immediately.
