Wild Mushroom Croustades

Toasted bread cups, or croustades, are a French hors d’oeuvres I learned in cooking school and a concept I think should be brought back. They’re far easier to make than pastry tartlets and they can hold creamy, rich fillings. For these, I use a mix of inexpensive white or brown regular mushrooms with whatever seasonal wild mushrooms I can find, such as chanterelles, oyster mushrooms, or morels. Don’t ignore the nutmeg; it lifts all the other flavors (and is best when freshly grated).
