Keep a jar of pumpkin pie spice handy if you love to bake. A blend of cinnamon, ginger, nutmeg and cloves, it’s delicious in sweet breads and biscuits, not just pie!

Lighter-Than-Air Potato Rolls

Makes one dozen

1/2 c. instant potato flakes

1 t. sugar

2 T. butter, softened

1/2 c. hot water

1/3 c. cold water

2 c. biscuit baking mix

Stir together potato flakes, sugar, butter and hot water. Stir in cold water and baking mix. Gently smooth dough into a ball on a floured surface; knead 8 to 10 times. Roll out into a 10"x6" rectangle. Cut into 12 squares; arrange on an ungreased baking sheet. Bake at 450 degrees for about 10 minutes, until golden.
