Broccoli-Crab Bisque

Serves 4

1 c. leek, sliced

1 c. sliced mushrooms

1 c. broccoli, chopped

1 clove garlic, minced

1/4 c. butter

1/4 c. all-purpose flour

1/4 t. dried thyme

1/8 t. pepper

1 bay leaf

3 c. chicken broth

1 c. half-and-half

1/2 c. shredded Swiss cheese

1 c. crabmeat, flaked

In a medium saucepan over medium heat, cook leek, mushrooms, broccoli and garlic in butter until crisp-tender. Blend in flour, thyme, pepper and bay leaf. Add chicken broth and half-and-half all at once. Cook and stir until thickened and bubbly. Add cheese; stir until melted. Add crab; heat through. Discard bay leaf before serving.
