To rename, delete, or assign a color to a tag, right-click the tag in the list. To reorder tags in the sidebar, drag tags up or down the list. To choose which tags appear in the sidebar, select or clear the checkboxes in the list. To choose which tags appear in Finder’s File, shortcut (right-click), and menus, drag tags from the list to the Favorite Tags box.

When a tag that’s never been added to any file is added to a file for the first time, that tag appears automatically in the Finder sidebar and a crossbar (instead of a checkmark) appears in its checkbox in Finder Preferences.
