Louisiana Fried Catfish
PREP TIME: 10 MINUTES / COOK TIME: 20 MINUTES / SERVES 4 / 400°F / AIR FRY
Crispy golden-fried catfish coated in zesty Southern spices is a perennial favorite. This dish is traditionally battered in buttermilk and deep-fried. This air fryer version is lighter and healthier, yet every bit as good as Grandma used to make.
DAIRY FREE, FAST, NUT FREE
1 egg
â cup finely ground cornmeal
¼ cup all-purpose flour
¾ teaspoon salt
1 teaspoon paprika
1 teaspoon Old Bay seasoning
¼ teaspoon garlic powder
¼ teaspoon freshly ground black pepper
4 (5-ounce) catfish fillets, halved crosswise
Olive oil spray
1. In a shallow bowl, beat the egg with 2 tablespoons water.
2. On a plate, stir together the cornmeal, flour, salt, paprika, Old Bay, garlic powder, and pepper.
3. Dip the fish into the egg mixture and into the cornmeal mixture to coat. Press the cornmeal mixture into the fish and gently shake off any excess.
4. Insert the crisper plate into the basket and the basket into the unit. Preheat the unit by selecting AIR FRY, setting the temperature to 400°F, and setting the time to 3 minutes. Select START/STOP to begin.
5. Once the unit is preheated, place a parchment paper liner into the basket. Place the coated fish on the liner and spray it with olive oil.
6. Select AIR FRY, set the temperature to 400°F, and set the time to 20 minutes. Select START/STOP to begin.
7. After 10 minutes, remove the basket and spray the fish with olive oil. Flip the fish and spray the other side with olive oil. Reinsert the basket to resume cooking. Check the fish after 7 minutes more. If the fish is golden and crispy and registers at least 145°F on a food thermometer, it is ready. If not, resume cooking.
8. When the cooking is complete, serve.
INGREDIENT TIP: Adjust the cooking time depending on the thickness of your fillets. Try not to use ultra-thin fillets, as they tend to fall apart when flipping. Fish fillets should be at least ½-inch thick to cook properly in the air fryer.
