NOTE: Gochujang is a Korean chile pepper paste that can be found at most Asian markets. It is inexpensive, flavorful, and adds a nice punchiness to this recipe.

SKILLET RASPBERRY JAM

This is the jam I make when I’m on vacation during berry season and I find myself in possession of sweet, very ripe fruit. I’ve taken this same approach with strawberries, blackberries, and even black cap raspberries, alone and in combination, and they have all been wonderful. Still, of all the batches I’ve made, I like this simple ruby red version best. The finished product is always a little loose at first, but after a night in the fridge, the open jar always firms up nicely.

MAKES 2 (HALF-PINT/250 ML) JARS

1½ pounds/680 g ripe raspberries (about 2 dry pints)

¾ cup/255 g agave nectar

Juice of 1 lemon
