Shrimp Pie

This recipe had its origins in a popular cookbook from many years ago called Make It Now, Bake It Later. Over the many, many times I’ve made it, the recipe has evolved to the point that it bears only a faint resemblance to the original. For instance, I use twice as much shrimp and a lot more seasoning. But Make It Now, Bake It Later deserves a lot of credit for coming up with a dish that really is better for being put together at least twelve hours ahead of time. My grandson Ben LeClercq loves this pie.

Oh, yes. Don’t worry about deveining the shrimp. Once you’ve deveined them and then washed them again, you might as well be serving cardboard.
