Avocado (cubed) 1

Salsa 1 cup

Sour Cream 1 cup

Warmed Wheat Tortillas (whole) 4

Tomatoes, no-salt-added (drained and diced) 2 cups

Black Beans (drained and rinsed) 2 cups

Refried Beans 2 cups

Ground Coriander 1 teaspoon

Ground Cumin 2 teaspoons

Chili Powder 1 tablespoon

Minced Garlic Cloves 2

Jalapeno Pepper (finely chopped and seeded) 1

Onion, medium (chopped) 1

Canola Oil 1 tablespoon

Instructions:

Take a large-sized skillet (non-stick) that is coated using the cooking spray, heat the oil in it over medium flame.

Add the jalapeno and onion, stir and cook until they turn tender. Add the seasonings and garlic, then cook for a minute longer.

Add and stir tomatoes and beans, then heat through.

Serve the mixture of beans in the tortillas with the toppings as you desire.
